1. Preheat waffle maker according to manufacturer directions.
2. Stir together leftover mashed potatoes and eggs in a large bowl until well combined. Stir in flour and chives until a smooth batter comes together.
3. Depending on the size of your waffle maker, use a ¼ or ½ cup measuring cup to measure out waffle mix. Spray waffle maker then add potato mixture and cook according to manufacturer directions, until golden brown. Carefully remove and repeat until all waffles are made.
4. Serve with sour cream, bacon bits, shredded cheese, cranberry sauce, leftover turkey and any other Thanksgiving leftovers you desire!
