Double Chocolate Cake Pops

Ingredients
4 Double Chocolate Muffins
¼ cup chocolate frosting
½ cup chocolate chips
1 tbsp coconut oil
Cake pop sticks
Directions
- Cook Double Chocolate Muffins according to package directions. Once cooled, crumble the muffins with a fork or your hands. Mix in the frosting using a small hand mixer or a smooth one until combined.
- Form muffin mixture into small rounded balls and place on a parchment-lined baking sheet. Place in the freezer for 1 hour.
- Melt chocolate chips and coconut in the microwave, stirring every 20 seconds until melted.
- Dip one end of a cake pop stick into the melted chocolate and then insert it into the chilled cake ball. Repeat with all the cake balls.
- Place in the freezer again for 20 minutes.
- Dip the chilled cake ball into the melted chocolate coating to completely cover. Sprinkle with sprinkles if desired, then place in styrofoam to harden for about an hour. Enjoy!
