1 Can Black Beans, drained & rinsed
1 Jalapeno, seeded & chopped
1/2 Mango, peeled, pitted & chopped
3/4 cup Pomegranate Seeds
1/4 cup Cilantro, finely chopped
1/4 cup Red Onion, finely chopped
2 tbs Lime Juice
Directions
1. In large bowl, toss all ingredients and ⅛ teaspoon salt. Makes about 4 cups.
Chef Tip: Serve salsa with tortilla chips, as a topping for pork chops or chicken, and in fish or shrimp tacos.
