Ingredients
1 package (18.4 ounces) Smithfield® sweet teriyaki fresh pork tenderloin
1 bag (10 to 12 ounces) tortilla chips
3 cups shredded Cheddar cheese
1 1/2 cups drained and coarsely chopped prepared kimchi
1/2 cup Lawry’s® sweet Asian BBQ sauce, divided
Directions

1. Prepare outdoor grill for direct grilling over medium-high heat. Pat pork dry with paper towel and place on hot grill rack; cover and cook 20 minutes or until internal temperature reaches 145°, turning ¼ turn every 5 minutes. Transfer pork to cutting board; loosely cover with foil and let stand 10 minutes. Reduce grill to medium heat; cut pork into ½-inch pieces.

 

2. In 13 x 9-inch baking dish, layer half of each the chips, cheese, kimchi and pork; drizzle with 2 tablespoons BBQ sauce. Repeat layers and place dish on hot grill rack; cover and cook 8 minutes or until cheese melts and edges are golden. Makes about 10 cups.

 

3. Serve nachos drizzled with remaining ¼ cup BBQ sauce. Chef Tips: Customize this recipe by swapping the pork with marinated tempeh and/or drizzling nachos with sriracha mayo before serving. Nachos can also be baked in a 400° oven for 8 minutes or until cheese melts.
