Blackberry Almond Crumble Bars

Ingredients
1/2 (8-ounce) package cream cheese, softened, divided
1/2 cup unsalted butter
1/3 cup granulated sugar
1 1/2 cups old-fashioned rolled oats, divided
1 cup all-purpose flour
2 1/2 cups fresh blackberries
2 tablespoons cornstarch
2 tablespoons fresh lemon juice
1/2 cup chopped raw almonds
1/2 cup packed light brown sugar
Directions

1. Preheat oven to 350°. Line 13 x 9-inch baking dish with parchment paper so that paper extends about 2 inches over sides of dish; spray with cooking spray

 

2. In large bowl, with mixer on medium-high speed, beat half the cream cheese, butter and granulated sugar 2 minutes or until light and fluffy, scraping down bowl occasionally. Reduce speed to low; gradually add 1/2 cup oats and flour, and beat 30 seconds or until just incorporated. Press dough into bottom of prepared dish; bake 15 minutes or until lightly browned. Cool completely on wire rack

 

3. In large bowl, toss blackberries, cornstarch and lemon juice; spread over prepared crust

 

4. In large bowl, with mixer on medium speed, beat almonds, brown sugar, and remaining half of the cream cheese and and 1 cup oats; sprinkle over blackberry mixture and bake 35 minutes or until top is golden brown

 

5. Cool bars completely in pan on wire rack. Using overhanging sides of parchment paper, transfer bars to cutting board; remove parchment paper and cut into 12 (2 x 4 1/2-inch) bars
