Cook Once, Eat Twice, Repeat.

A nod of thanks to Earth.  In recognition of our new “normal” and with a very deliberate nod to Earth Day, we are focusing our efforts this month on sustainability and reducing food waste where we can.

“Cooking Once, Eating Twice” reduces food waste, reuses and repurposes ingredients maximizing on meals!

Remember these helpful tips!

*Freeze Your Fruits and Veggies for future use in soups, stews, dips, quiches, muffins, smoothies, desserts, oatmeal toppers and more.

  • With vegetables, remember to blanch them first before drying, packaging and storing by cooking in boiling water then immediately transferring to a bowl of ice water to halt the cooking process. Remember to separate them before packing into a zip-lock bag and freezing.
  • With fruits, it’s most important to consider the intended later use (such as smoothies or breakfast toppings) so as to determine if you will need the fruit saved whole or cut into smaller pieces. Also, it’s important to prepare as needed before freezing...so, peel bananas, remove strawberry hulls etc. while grapes and berries are fine frozen whole.

*Reuse, Repurpose, Repeat to Reduce waste Tips

  • Useful ways for bread, turn it into croutons or breadcrumbs instead
  • Got veggie scraps? toss, turn ‘em into veggie broth
  • Turn those wilted greens into a pesto sauce of dreams
  • Use whole lemons and citrus peels to make marmalade or add zesty appeal
  • Take the pulp from homemade juice to give veggie burgers an added fiber boost

Celebrate Earth Day by staying safe, staying home, cooking once and eating twice.
